MULTIDIMENSIONAL ASSESSMENT OF FOOD QUALITY

In recent years we have witnessed a complexification of the concept of food quality. The dimensions that are being considered are multiple, in addition to the traditional assessments in terms of organoleptic aspects, consumption occasions and price, assessments on food quality includes environmental impacts of food production, socio-economic dynamics linked to food systems, and health impacts of food consumption. The increasing attention of consumers and policymakers on these aspects is one of the key drivers profoundly modifying eating habits and food shopping behaviour and provoking a strong change in the processes of food production.

In this perspective, the food systems should face new challenges in terms of food production, promoting the global quality of food and sustaining the transition towards innovative strategies of food production to promote human and environmental health, according to a global health approach.
